Apricot Honey Energy Balls

Ingredients
- 2 tbsp coconut oil, melted
- 2 tbsp of honey
- 1 egg, beaten
- 1 tbsp chia seeds
- 40g dried apricots, diced
- 100g rolled oats
- 50g plain flour
- 1 tbsp pumpkin seeds
- 1 tbsp sesame seeds
How to Make It
Pre-heat the oven to 200°C/Gas Mark 6 and line a baking tray.
Mix all of the ingredients together and squeeze into 8 balls.
Place onto the baking tray and bake in the oven for 20 minutes until golden.
