- 2 large avocados
- 8 rashes of bacon
- 4 eggs
- 2 handfuls of grated cheese
- 2 tbsp chopped parsley
How to Make It
Pre-heat the oven to 200°C/Gas Mark 6 and grease a baking tray.
Grill the bacon until crisp, allow to cool a little and cut into pieces.
Cut open the avocados and remove the stone. Place them skin side down on the baking tray.
Carefully crack an egg into each half, scatter over the parsley, bacon and cheese.
Bake for 7-8 minutes, until the cheese is golden, and the egg just cooked to your liking. Serve.
