Bean and Pasta Salad
Ingredients
- 200g dried pasta (any kind)
- 1x 400g tin of cooked cannellini beans
- 150g baby spinach leaves, sliced
- 4 tbsp soy yoghurt
- ½ tsp garlic powder
- ¼ tsp sea salt and pinch of pepper
- 1 tsp dried oregano
- 2 tbsp nutritional yeast
How to Make It
Cook the pasta according to the packet and drain. Cool under cold water.
Mix the soy yoghurt, garlic powder, salt, pepper and oregano together and stir into the pasta.
Stir the spinach and beans into the pasta and divide between 4 bowls.
Scatter over the nutritional yeast. This can be served immediately or placed in a container for a packed lunch.
