‘Cheats’ Banana Ice Cream
- 4 large, ripe bananas, cut into chunks
- 1tbsp double cream or crème fraiche
- 2tbsp pistachios, crushed
- Optional: 2tbsp shop bought ‘squeezy sauce’ such as coffee, chocolate, butterscotch or toffee
How to Make It
Put the banana chunks on a flat tray and cover with cling film. Put into the freezer and leave for around an hour and 30 minutes, until completely frozen.
Leave until ready to serve, then put the banana chunks into a food processor. Whizz on high until smooth and add the double cream/crème fraiche slowly until right consistency is achieved.
Scoop into glasses, sundae dishes or bowls, then top with the sauce and nuts. Alternatively, you can put the pistachios into the blender with the ice cream mix, and blend for 10 seconds before serving.
