- 1 Tablespoon Olive Oil
- 1 Onion Chopped
- 2 Cloves Garlic Crushed
- 2 Courgettes Chopped
- 6 Tomatoes Chopped
- 1 Tablespoon Tomato Puree
- 1 Tablespoon Cumin
- 1 Teaspoon Paprika
- 1 Teaspoon Chilli Flakes
- 200G Halloumi Sliced,
How to Make It
In a frying pan heat the oil over a medium heat. The pan should be suitable to go under a grill.
Add the onion and fry for 2 minutes, Add the garlic and cook until softened.
Add the tomatoes, courgettes, tomato puree and spices. Stir well. Cook over a medium heat for 20 minutes until everything is softened. Don’t worry if the tomatoes release their juice.
Heat a grill to medium-high heat.
Remove the pan from the heat and place the slices of halloumi across the top of the vegetables. Place under the grill for a few minutes until the cheese has browned. Be careful when removing the pan from under the grill that the handle is not hot.
Serve and enjoy.
