Jackfruit Loaded Nachos
- 4 Tortillas cut into triangle shapes,
- 400g Tin Jackfruit drained rinsed and chopped,
- 200g Tin Red Kidney Beans drained and rinsed,
- 100g Feta or vegan friendly cheese,
- 1 Avocado diced,
- 2 Spring Onions sliced,
- Any Additional Toppings You Would Like - For Example Salsa, Tomatoes, Hot Sauce, Red Onions
How to Make It
Cut each tortilla into 8 wedges – easiest way is to cut into quarter and then cut each quarter in half,
Arrange the tortilla wedges in an even layer on a large baking tray. Cook for 2-3 minutes or until they just start to crisp up,
Stir the drained jackfruit with the kidney beans in a bowl and spoon over the tortilla wedges,
Top with the cheese and bake for 5 minutes or until the cheese has melted, Scatter over the diced avocado and spring onions before serving .
