Jackfruit Loaded Nachos

Ingredients

  • 4 X Tortillas Cut Into Triangle Shapes,
  • 400G Tin Jackfruit Drained Rinsed And Chopped,
  • 200G Tin Red Kidney Beans Drained And Rinsed,
  • 100G Feta Or Vegan Friendly Cheese,
  • 1 Avocado Diced,
  • 2 Spring Onions Sliced,
  • Any Additional Toppings You Would Like - For Example Salsa, Tomatoes, Hot Sauce, Red Onions

How to Make It

Preheat the oven to 200C,

Cut each tortilla into 8 wedges – easiest way is to cut into quarter and then cut each quarter in half,

Arrange the tortilla wedges in an even layer on a large baking tray. Cook for 2-3 minutes or until they just start to crisp up,

Stir the drained jackfruit with the kidney beans in a bowl and spoon over the tortilla wedges,

Top with the cheese and bake for 5 minutes or until the cheese has melted, Scatter over the diced avocado and spring onions before serving .
