Keto Cauliflower Fried Rice
Ingredients
- 1 head cauliflower, riced/grated
- 4 tbsp coconut oil
- 1/2 onion, chopped
- 160g frozen mixed vegetables
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 2 eggs, beaten
- Salt and pepper to taste
How to Make It
Heat the coconut oil in a large wok or skillet over high heat.
Add the chopped onion and stir-fry for 2-3 minutes until it's softened.
Add the frozen mixed vegetables and garlic to the wok and stir-fry for another 2-3 minutes until the vegetables are tender.
Add the riced cauliflower and soy sauce to the wok and stir-fry for another 2-3 minutes until the cauliflower is cooked through.
Push the cauliflower mixture to one side of the wok and pour the beaten eggs onto the empty side of the wok.
Scramble the eggs until they are cooked through, then mix them with the cauliflower mixture.
Season with salt and pepper to taste.
Serve hot.
