Make Ahead Mincemeat Banana Bread
Ingredients
- 250g unsalted butter
- 140g mincemeat
- 90g caster sugar
- 150g self-raising flour
- 2 ripe bananas, peeled and mashed
- 2 eggs, beaten
- 2 tbsp honey
- 2 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp mixed spice
How to Make It
Preheat the oven to 180 degrees celsius and line a 900g loaf tin with parchment paper.
In a bowl, beat 150g of the butter with the sugar with a whisk until light and fluffy. Next, slowly whisk in the beaten eggs and half of the flour. Once mixed, fold in the rest of the flour along with the baking powder, mixed spice, mashed banana and mincemeat.
Pour the mixture into the baking tin and bake for one hour. Leave to cool for 10 minutes and then transfer to a wire rack.
To make the butter, beat the remaining butter with the honey and cinnamon using a whisk until it’s fluffy. Serve with the banana bread.
