Mediterranean Chicken Skewers with Tzatziki
Ingredients
- 600g chicken breast, cut into bite-sized pieces
- 1 red onion, cut into bite-sized pieces
- 1 red pepper, cut into bite-sized pieces
- 1 yellow pepper, cut into bite-sized pieces
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 cucumber, grated
- 200g Greek yoghurt
- 2 clove garlic, minced
- 1 tbsp lemon juice
- Salt and pepper, to taste

How to Make It
Preheat the grill to medium-high heat.
In a large bowl, mix together the chicken, red onion, red pepper, yellow pepper, olive oil, dried oregano, ground cumin, salt and pepper.
Thread the chicken and vegetables onto skewers.
Grill the skewers for 10-12 minutes, or until the chicken is cooked through.
In the meantime, make the tzatziki. Combine the grated cucumber, Greek yoghurt, minced garlic, lemon juice, salt and pepper in a bowl and mix well.
Serve the chicken skewers with tzatziki on the side.
