Mediterranean Quinoa Salad
Ingredients
- 100g quinoa, cooked and cooled
- 50g cherry tomatoes, halved
- 50g cucumber, diced
- 50g red onion, diced
- 50g kalamata olives, pitted and sliced
- 30g crumbled feta cheese
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp chopped fresh parsley
- Salt and pepper, to taste
How to Make It
In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
In a large bowl, add the cooked quinoa, cherry tomatoes, cucumber, red onion, kalamata olives, and crumbled feta cheese.
Pour the dressing over the quinoa and vegetable mixture and toss until everything is well coated.
Sprinkle with chopped fresh parsley and serve.
