Mushroom and Parmesan Gnocchi
- 80g mushrooms, sliced
- 200g fresh gnocchi
- 1 tbsp olive oil
- 40g spinach
- 30g parmesan, grated
How to Make It
Preheat the oven to 200 degrees celsius and line an oven tray with baking paper. Scatter the gnocchi and mushrooms on the tray and drizzle with olive oil, salt and pepper, then bake for 25 minutes. Stir the gnocchi occasionally.
Stir the spinach into the mix to wilt, then top with the grated parmesan. Bake for a further 2 minutes until the cheese has melted, then serve.
