One Pot Spanish Chicken And Rice

Ingredients
- 500g chicken thighs
- 50g chorizo, sliced
- 400g tin chopped tomato
- 250g microwave rice
- 1 onion, sliced
- 2 red peppers, sliced
- 2 garlic cloves, minced
- 1 tbsp olive oil
How to Make It
Pour the oil in a frying pan over a medium head and cook the chicken and onions for 8-10 minutes, stirring continuously.
Add the chorizo, garlic and peppers and fry for a further 3 minutes.
Cook the rice following the packet instructions. Next stir the rice and chopped tomatoes into the pan, top with 500ml of boiling water, cover and cook for 12 minutes.
Uncover the mix and season with salt and pepper. If the rice looks dry then add a splash of water and serve.
