Pulled Chicken Bagels
- 2x chicken breasts
- 4 tbsp BBQ sauce
- 1 tbsp honey
- ½ tsp cumin
- 2 tbsp soy sauce
- 1 romaine lettuce, shredded
- 1 plum tomato, sliced
- 2 wholemeal bagels, halved
How to Make It
Pre-heat the oven to 200°C/Gas Mark 6 and grease a large piece of foil on a baking tray.
Place the chicken breasts onto the foil.
Mix the BBQ sauce, honey, cumin and soy sauce together and dizzle over the chicken.
Wrap the foil around the chicken to create a large parcel and place in the oven.
Bake the foil parcel for 20-25 minutes until the chicken is cooked through. Open the parcel and leave to cool.
Place the bottom half of a bagel onto a plate and top with some of the shredded lettuce and sliced tomato.
Shred the chicken breast, place on top of the tomato and top with the other half of the bagel.
