Roast Feta and Mediterranean Vegetables


  • 100g feta cheese
  • 1 red pepper, sliced
  • 1 red onion, sliced
  • 1 tomato, quartered
  • ½ lemon
  • 1 wholemeal pita
  • 1 tbsp olive oil

How to Make It

Preheat the oven to 180 degrees celsius and line a deep dish oven tray with baking paper.

Pour the vegetables into the tray and spread evenly and place the feta in the centre.

Drizzle the lemon and olive oil across the tray and season with salt and pepper. Cook for 25 minutes.

Place the pitta in the oven for the last 1-2 minutes and serve.
