Smoked Salmon and Avocado Toastie
- 4 slices of bread
- 1 ripe avocado, peeled and stoned
- 2 large eggs
- 4 slices of smoked salmon
- 1 lemon
- Handful of watercress
- 3 tbsp butter
How to Make It
Butter each slice of bread on both sides and cut a large circle out of the centre of two of the slices using a knife or cookie cutter.
Heat a frying pan over a medium heat and cook the bread for 2 minutes.
Whilst the bread is cooking, slice the avocado into strips and squeeze over the lemon juice.
Flip the bread in the pan and crack an egg into each cut-out hole. After 2 minutes, transfer the full slices of bread to a plate.
Cover the pan with a lid and continue cooking the eggs for a further 1-2 minutes.
Top the full slices of bread with avocado, smoked salmon and watercress, then season with pepper. Top with the egg-in-the-hole slice of bread along with the egg and serve.
