Spiced Sweet Potato Bake

Ingredients
- 2 medium sweet potatoes
- 1 onion,diced
- 1 green pepper, deseeded and diced
- 195g sweetcorn
- ½ tsp mild chilli powder
- ½ tsp ground cumin
- ¼ tsp smoked paprika
- 2 tbsp olive oil
- 4 eggs
- Salt and pepper to season
- 2 tbsp chopped coriander
How to Make It
Pre-heat the oven to 200°C/Gas Mark 6 and grease or line a baking tray.
Top the sweet potato, onion, garlic, pepper, sweetcorn, chilli powder, cumin, paprika and oil on to the tray and mix really well together.
Bake for 25 minutes until the vegetables are all soft.
Remove the tray from the oven and crack the eggs in, amongst the vegetables and season with salt and pepper.
Cook for a further 8-10 minutes until the eggs are cooked to your liking.
Serve onto 2 plates and top with the chopped coriander.
