Sweet Potato Hash
- 1 tbsp olive oil
- 2 sweet potatoes, peeled and cubed
- 1 leek, shredded
- 200ml vegetable stock
- ½ tsp sea salt
- 1x 400g tin black beans, drained
- 150g baby plum tomatoes, halved
- 4 tbsp pumpkin seeds
How to Make It
Heat the oil in a frying pan and add the sweet potatoes and leek and stir over a medium heat for 10 minutes to soften.
Add the stock and salt and cook for a further 10 minutes until the potatoes are cooked.
Add the kale, beans and tomatoes to the pan and stir for a further 5 minutes until wilted and soft.
Divide between 4 pasta bowls and top with the pumpkin seeds. Serve.
