Gingerbread Pancakes
Ingredients
- 150g self raising flour
- 200ml semi-skimmed milk
- 1 egg, beaten
- ½ tbsp maple syrup
- 2 tsp caster sugar
- 1 tsp ground ginger
- 1 tsp cinnamon
- ½ tsp baking powder
- Vegetable oil for frying
How to Make It
Place the flour, sugar, ginger, cinnamon and baking powder in a bowl and combine.
In a jug, mix the egg, milk and maple syrup, then gradually mix the dry ingredients with the wet.
Whisk the ingredients together until it forms a smooth batter.
Heat the oil in a pan on a medium heat and use a ladle to pour some of the mixture into the pan. Cook for 1-2 minutes until it starts to bubble, then flip and cook for a further minute.
Continue this with the rest of the mixture, then serve with toppings of your choice.
