Chicken ‘Nuggets’ and Chips
Ingredients
- 250g Mini Chicken Fillets
- 150g Oats
- 1 Egg beaten
- 2 tbsp Plain Flour
- 3 tbsp Olive Oil
- Hot Sauce to taste optional
- 1 Courgette chopped
- 8 Florets of Broccoli
- 2 White or Sweet Potatoes cut into chip shapes,
How to Make It
Preheat the oven to 190C.
Mix 1 tablespoon of olive oil and the chips together and place in one layer on a baking tray.
Mix 1 tablespoon of olive oil courgette and broccoli together and place on a separate baking tray. Place both trays in the in the oven to roast for 30 minutes but keep a close eye on them.
Meanwhile place the flour on a plate and the egg in a shallow bowl. Add the oats to a separate shallow bowl adding a few drops of hot sauce (if you are using) and mix well.
Roll each piece of chicken in the flour then dip in the egg allowing any excess to drip back into the bowl and then into the oats until they are thoroughly coated. You may need an extra egg or flour depending on how well the chicken coats.
Place the chicken pieces on a non-stick baking tray and drizzle with the remaining oil. Cook in the oven for 15-20 minutes or until thoroughly cooked through and the coating is crisp,
Serve the chicken nuggets roasted vegetables and chips together.
