Coconut And Banana Pancakes

Coconut And Banana Pancakes


    • 400ml tin coconut milk
    • 150g plain flour
    • 1 banana, sliced
    • 3 tbsp caster sugar
    • 2 tsp baking powder
    • Olive oil for frying
    • Pinch of salt

      How to Make It

      In a bowl, combine the flour, 2 tbsp of sugar and salt. In a separate bowl, pour the coconut milk out and whisk until the fat has combined with the liquid.

      Measure out 300ml of the coconut milk and slowly pour it into the dry mix until smooth.

      Heat a pan on a medium to high heat and add 1 tbsp of olive oil.

      Pour 2-3 tbsp of batter into the pan and cook for 1-2 minutes until the top begins to bubble. Then flip and cook for a further minute.

      Continue for the rest of the mix. Then pour the rest of the coconut milk and sugar into a pan and simmer until thickened.

      Serve the pancakes and top with bananas and the coconut milk mix.

      *Makes 8 pancakes
