Fluffy and Fruity Vegan Pancakes
Ingredients
- 150g self-raising flour
- ½tsp baking powder
- ½tbsp sugar
- ½tbsp vanilla extract
- 200ml milk (oat, almond or soya)
- ½tbsp vegetable oil (you may need more as you do batches)
- Pinch of salt
- Optional: mixed berries, vegan chocolate chips, other fruits
How to Make It
Mix all the dry ingredients together with the vanilla extract.
Slowly add the milk, whisking (do not beat), until the mixture is smooth and no lumps. It should be thick and almost creamy.
On a medium heat, place the vegetable oil in a frying pan or skillet. Drop some of the mixture into the pan, and very gently swirl to keep the shape. You are best to make 2 or 3 pancakes at a time, if your pan is big enough.
Leave the mix to bubble up (you will be able to see it round the edges). When the top has started to dry, flip over the pancake. They should not need more than a couple of minutes each side.
Remove from the pan and place some baking parchment between each pancake and keep warm until you finish the others.
This recipe makes 8 pancakes - each pancake is 92 calories.
