Granola Breakfast Vegan Style
- 200g jumbo oats
- 2tsp cinnamon
- 80g dried apricots, roughly chopped
- 80g coconut oil, melted
- 130g mixed nuts (unsalted), roughly chopped
- 50ml maple syrup or raw honey
How to Make It
Set your oven accordingly, to 180°C/160°C fan assisted/Gas mark 4.
Prepare a large baking tray (or two small ones). You need to line them with baking paper/parchment.
Take a bowl and mix all your ingredients together, stirring well to make sure everything is combined. Spoon over the syrup or honey, mix again, and flatten out to even.
As soon as the oven is ready, bake the mix for around 20-25 minutes, but do check it after 15-20 mins. You may possibly need to stir and flatten out again.
Ensure the mix is completely cooled down, before placing in an airtight container. Consume within 3-4 weeks for maximum benefit and freshness.
