Loaded Sweet Potato Chips
- 4 Small Sweet Potatoes
- 2 Tablespoon Olive Oil
- 200G Tinned Kidney Beans
- 1 Red Onion Diced
- 80G Grated Cheese Or Feta Cheese
- 2 Avocadoes Diced,
How to Make It
Preheat oven to 180C.
Cut potatoes into wide chip shapes. Place in a bowl and mix with half the olive oil. Lay them in a single layer on a lined baking tray. Use 2 trays if needed. It’s important the sweet potato isn’t crowded next to each other.
Bake for 25-30 minutes until cooked and tender. Turn halfway through cooking.
Meanwhile heat the remaining oil in a frying pan over a medium heat.
Drain the kidney beans and add to the pan with the red onion and cook for 3 minutes.
When the sweet potato is cooked share out between 4 bowls and top with the bean and onion mixture.
Sprinkle the cheese on top and add the avocado before serving.
