Peach and Raspberry Roll Up

Ingredients

    • Low calorie cooking oil spray
    • 2 ripe peaches, pitted and cut into chunks
    • 180g raspberries
    • 2 tbsp honey

      How to Make It

      Preheat the oven to 180 degrees celsius and line a rectangular tray with baking paper. Then coat the paper in the oil spray.

      Add all of the ingredients to a food processor or blender until smooth. If you don’t want the raspberry seeds you can pour the mixture through a sieve.

      Evenly spread the fruit over the baking sheet and cook for 5-6 hours until the leather is dry but still flexible. Keep an eye on the fruit as the cooking time varies.

      Allow the leather to cool then cut into strips. Wrap in wax paper or cling film and store in an airtight container.
