Salmon Rostis

Ingredients
- 500g Potatoes peeled and grated
- 120g Smoked Salmon
- 60g Rocket Leaves
- 120ml Crème Fraîche
- 1 tbsp Olive Oil
- Salt and Pepper
How to Make It
Put the grated potato into a bowl season with salt and black pepper and leave for a few minutes.
Squeeze out as much moisture as possible. Divide the mixture into 4 and make into pancake like shapes.
Heat the oil in a frying pan over a medium heat. Add the potato pancakes and cook until crisp on both sides
Serve topped with the rocket smoked salmon and crème fraîche.
