Sausage Scramble on Sourdough Toast
- 2 x 2½cm slices of seeded or plain sourdough bread
- 4 large eggs, beaten and whisked
- 2 reduced fat pork sausages cut into 1cm rounds
- 1 green onion stalk, finely chopped
- 10g chives, finely chopped
- 1 garlic clove, finely chopped
- 1kcal cooking spray
- Salt and pepper, to taste
- Chilli flakes, to garnish
How to Make It
Heat a large skillet or non-stick frying pan over a medium heat.
Grease with 1kcal cooking spray and proceed to add in your sausage and garlic.
Cook until the sausage is golden brown and cooked thoroughly. This should take around 10 minutes.
Next, add in your egg to the sausage and garlic.
Stir continuously to create a scramble. This should take 8 – 10 minutes.
Whilst the egg is cooking, toast the sourdough bread (either with a toaster or under the grill)
Once the sourdough is toasted and egg cooked thoroughly you can then serve. With one piece of toast per plate, divide the scrambled mixture evenly and over the toast.
Evenly sprinkle over your finely chopped chives and green onion and finish with a light sprinkling of chilli flakes. Flavour with salt and pepper to taste and then serve.
