Vegan Pulled Jackfruit Burgers
- 1 tin jackfruit, drained
- 2 brioche burger buns
- 200ml vegetable stock
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 2 tsp soy sauce
- 1 tsp paprika
- 1 tsp tomato puree
- 1 tsp brown sugar
- Salt and pepper to taste
How to Make It
Drain the jackfruit and rinse. Next, take out the core and get rid of the seeds, then cut the jackfruit in half.
Add the olive oil to a pan on a medium heat, then add the jackfruit, garlic, paprika, soy sauce, tomato puree, salt and pepper. Then, add the sugar and vegetable stock, combine and leave to simmer on a low heat for 20 minutes.
Once the sauce has thickened, use a fork to pull the jackfruit apart. Add the jackfruit to the buns with salad and serve.
